Considering that it's Stanford, and that there's about 30 thousand people around the world folding everything on their GPUs ,(except laundry, still have to do that by hand :() I think there's like a 99% chance that Folding@home will be at least mentioned if not discussed as proof of GPU computing. This was the first project to use GPUs for distributed computing or major molecular dynamics calculations.

Yes, I think there's a good chance of that, although it's worth noting that there are many other pioneers of GPU related work at Stanford as well.
