No, did nothing special, just created the log and saw that GPU had appeared in the system description...

But now I have another issue: when using the GPU to fold the whole PC crashes from time to time....

That might be cause by any of these issues:
1) Corrupted installation of drivers
2) Faulty hardware of the GPU
3) High temperature of the GPU
4) Unstable PSU
5) Unstable Overclock of the CPU/GPU

Download and install MSI Afterburner. You can try reducing the power limit to 90%, and/or increase the fan speed from Auto to 90%, downclock by reducing the core speed.

When it crashes what exactly happens? Blue Screen of Death? FAH fails? The desktop locks?

Will try MSI Afterburner - crash results in black screen and restart of PC; no blue screen or anything

sounds like a hardware fault then. software faults will usually give either a BSOD or a reset to desktop.

I would be looking at things like temperatures (give the system a good clean, get all the dust out with a can of compressed air and a vacuum) or the PSU (a 2700X and a 2070 will draw a chunk of power).
