EdOlkkola build several folding PCs and his recommendation is to use mainboards which have a big distance between the 3 graphics cards slots. So the GPUs have enough space to get fresh air. This is only needed for GPUs with high watt usage like gtx 1080 ti and if using a closed case.

Another point is to have enough pcie bandwidth speed for 3 GPUs, e.g. 3x pcie 3.0 x8. This is only needed for fast GPUs using Windows. On Linux it doesn't matter.

Giga-Byte X99 UD4 - supports up to 4 PCIE3.0-compatible devices, excluding risers (USB3, M2, etc). Also 40 lanes soc. LGA2011-3 CPU'S are supported.
My choice, but not the best one, there are known issues with this MB. But I got my luck with this upgrade:)
