I used to run dual monitors while folding on a 1070Ti without issue, so your 1080 should be able to handle it. What temperature is your card running at?
Lagging of the graphical user interface is normal (slow scrolling in a web browser for example) while GPU is folding. (at least this is what i saw in Linux, on dual monitors)
Flickering of screen is not normal at all.
What operating system? What connection of monitor, and what settings?
